Ingredients

  • 2 Tbsp butter
  • 2 C sliced celery
  • ¾ C chopped onions
  • 2 Tbsp all-purpose flour
  • 3 C vegetable broth
  •  tsp pepper
  • 2 C fresh chopped spinach
  • ½ C half-and-half

Directions

Step 1

In a 2-quart saucepan; melt the butter or margarine over medium-high heat. Add the celery and onions, cook, stirring, until soft, about 3 minutes. Stir in the flour until absorbed.

Step 2

Add the broth and pepper, stirring constantly, until soup comes to a boil. Add the spinach, reduce heat, and simmer 10 minutes.

Step 3

Stir in half-and-half. Cook, stirring, until heated through.
