Moroccan Quinoa Salad

Ingredients

  • 1 C quinoa
  • ½ C chopped dried mango
  • ½ C diced tomato
  • 2 tsp olive oil
  • 2 C water
  • 1 small red onion
  • 2 cloves minced garlic
  • ⅔ C Moroccan dressing
  • 8 C baby spinach
  • ¼ C walnuts

 

 

 Moroccan Dressing:

  • ¼ C lemon juice
  • 2 Tbsp plain yogurt
  • ½ Tbsp honey
  • ½ tsp cumin
  • ¼ tsp ground ginger
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Directions

Step 1

Toast quinoa over medium heat until it starts to pop and turn a golden brown (about 5 min)

Step 2

Heat oil over medium, add garlic and sauté, add mango and quinoa, stirring often until quinoa dried and light golden brown (3-4 minutes). Add water, salt, and bring to a boil. Bring to simmer (uncovered) until tender and water is absorbed (15-18 minutes).

In the meantime:

Make Moroccan dressing while waiting

Step 3

Mix quinoa with half the dressing, chopped tomatoes, and onion.

Step 4

Toss other half of dressing with spinach

Step 2

Serve spinach on a plate with quinoa on top. Sprinkle chopped walnuts over the top and enjoy!
